I think Italian food is my favorite cuisine to cook. If you couldn’t tell by my recipes… There is just something about the flavors and the process that really speak to my soul. Don’t get me wrong, I enjoy making food from every region of the world. That is the only way to truly learn flavor pairings, techniques and more. But I seem to always come back to Italian food.

A big part of that is the low cost of pasta. It is the king of affordable dinners. It's high volume, filling and dirt cheap. That's what inspired these stuffed shells. Ricotta can be a bit pricey, but Aldi’s brand is still affordable.

It also utilizes one of MY personal favs, which is sausage. All the spices you need are mixed right into the meat and it is always affordable. Take your pick, sweet or spicy Italian sausage, cut open the casing, stuff them shells and dig in.

Serves: 6-8

Ingredients:

  • 20–24 jumbo pasta shells

  • 8 oz Italian sausage

  • 15 oz ricotta

  • 1 1/2 cups shredded mozzarella, divided

  • 1/4 cup grated Parmesan

  • 1 egg

  • 1/2 cup pasta water

  • 24 oz marinara sauce

  • 1 tsp Italian seasoning

  • 1/2 tsp garlic powder

  • Salt and black pepper

  • Chopped parsley or basil, optional
