When you think comfort dishes, one of the first things that comes to mind is chicken pot pie. My only problem with chicken pot pie is it is time-consuming.

Well, not anymore.

This skillet pot pie is all done in one skillet, covered in pie crust and baked to perfection in under 45 minutes. Making enough to feed the whole family plus leftovers, this is one of my go-tos on a rainy day.

It also uses some easy hacks to expedite the process. By using pre-made puff pastry and a rotisserie chicken, you can throw this one together on any weeknight.

Ingredients:

  • 2 tbsp butter

  • 1 rotisserie chicken, shredded

  • 1 large shallot, diced

  • 3 cloves garlic, minced

  • 2 cups frozen mixed vegetables

  • 3 tbsp flour

  • 2 cups chicken broth

  • ½ cup heavy cream

  • 1 tsp dried thyme

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 sheet puff pastry

  • 1 egg, beaten
