Pork. The other white meat. Not only that, pork is the cheapest meat option that money can buy. See if this rings a bell… when you were younger, your mom, dad, grandparent cooked you a pork chop. That pork chop was so dry it hurt to chew, the flavor was bland, and the experience sucked.

Guess what? That’s not pork's fault. That’s your dad's fault. When treated correctly, pork is delicious. Its saltiness pairs so well with so many sweet flavors, it retains so much juice, and there are so many different ways to cook it.

It brings up a larger point. There are far too many aversions to specific ingredients that don’t make a whole lot of sense to me. You limit yourself and your grocery list by taking a firm stance against pork, dark meat, or vegetables. (Seriously, there are still grown-ups that don’t eat vegetables. If that’s you? Sorry, not sorry.)

I challenge you to expand your palate. Not only will that open up your grocery store, it will open up the options you can make in the kitchen. The BEST example of this is dark meat. Chicken thighs are delicious. Objectively delicious. If you like chicken breast, then there is no doubt in my mind you also like chicken thighs. The onlyyyyy reason you don’t… is because the meat's a different color? Really?

You could be saving so much money AND improving the flavors of your recipes with that simple switch, but “dark meat is yucky…”

Sorry if you feel attacked. That certainly wasn’t my intention, but I do challenge you to take some chances on pork and dark meat, etc. Try some new things, go back to recipes you may not have liked when you were younger. Taste buds change, and so do you.

  • Cast Iron Skillet or Thick-Bottom Pan

Ingredients:

  • 2-4 one-inch-thick or more pork chops

  • 2 peaches, diced

  • 1 shallot, minced

  • 1 tsp of Avocado oil

  • Salt

  • Pepper

  • 1-2 Sprigs of Rosemary

  • Butter

  • 2 cloves of garlic

  • 1/2 Tbsp of Apple cider vinegar

  • 1 cup of chicken stock

  • 1 tbsp dijon
