One Pot Creamy Tomato Basil Pasta
No straining, no mess, just throw it all in one pot, bring it to a boil and boom. Dinner.
Times are tough with seemingly no reprieve in sight. Gas prices are climbing 30 cents a day, grocery prices are moving in the wrong direction and it feels like everything is stacked against us.

You literally just throw it all in one pot and boil it. That’s it. Give it a few stirs here and there, add some parm, and bang, you have a delicious dinner for the whole family.
The crazy thing is the sauce. Just by boiling all this shit together, the end result is a luscious, creamy and cheesy sauce that coats each noodle, making every bite hit harder than the last. The basil gives it a lighter note to cut through the richness and the tomatoes combine with the cream to make a blush sauce to die for.

12-16 oz cherry tomatoes, halved
2 cups chicken broth (or water + bouillon)
1/2 cup heavy cream
1 small shallot (or 1/2 onion), finely sliced
2–3 cloves garlic, minced }
1/2 cup grated parmesan
Olive oil
Salt, pepper
Red pepper flakes (optional)
Fresh basil (or dried)
