Buffalo chicken is always good. Even bad buffalo chicken is good. Something about that combination just soothes the soul. It’s as versatile as it is delicious. You can have it as a dip, a sandwich, a wrap, pizza, shoot, you can even toss it in some pasta.

Personally, my favorite version is a slider. The sweet Hawaiian roll complements that spice with the ranch tying everything together.

The best part about buffalo chicken is how easy and inexpensive it is to make. A shredded rotisserie chicken is more than sufficient to make fantastic buff chicken. Are chicken thighs slow-roasted and broken down substantially better? Yes, without question. But the beauty of this recipe is highlighting shortcuts to save both time AND money.

First and foremost, King's Hawaiian rolls are on sale A LOT. Maybe you haven’t noticed, but if you check every time you go to the store, you will see a lot of chances to BOGO or buy one, get 50% off. They make them very accessible.

This is a great practice to get used to. Searching for consistent deals when you go to the store teaches you to look for savings. Learning shortcuts in recipes also gives you shortcuts in the store. You can adjust recipes you already love to accommodate slightly different ingredients. For example, a rotisserie chicken can replace chicken in A LOT of recipes.

  • 1 rotisserie chicken, shredded

  • 8 oz cream cheese

  • 1.5 cups shredded cheddar

  • 1 tbsp chopped parsley

  • 1/2 cup buffalo or hot sauce

  • 2 tbsp melted butter

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

Buffalo Ranch Sauce

  • 1/2 cup mayo

  • 1/2 cup sour cream

  • 2 tbsp whole or buttermilk

  • 3 tbsp hot sauce

  • 1 tbsp chopped chives

  • 1 tbsp chopped parsley

  • Dash of garlic powder

  • Dash of onion powder
