Alright, like I said, my favorite cut of beef finally came down in price, so we’re kicking off the Chuck Roast Series with the most important part: breaking the damn thing down. Get a chuck, get a sharp knife, and let’s turn one roast into a week’s worth of dinners.
Ok so first and foremost, the video attached is your go to guide to breaking down a chuck. That being said, use this article as a companion with more tips and tricks I couldn’t cover in the video, should you have any questions or concerns while you’re doing your thang.
Picking Your Roast
Not all chuck roasts are built the same. As seen in the video, we are looking for a chuck with a distinct “eye” section. If you look at the edges of your roast you will notice clear sections separated by fat. There is a whole mess of stuff at the top almost in a “U” shape. On the interior of that “U” you should be able to make out a steak-shaped section. Once you find that roast at the store, snag that bad boy and head to check out.
